We begin with a USDA Prime brisket trimmed of excess external fat, rubbed with our proprietary rub, and smoked at 275° for 10-12 hours. We then wrap it in peach butcher paper and continue to smoke to an internal temperature of 203°. Each brisket is sliced fresh to order.
We begin with USDA Graded Full Rack Spare Ribs and remove the membrane then season with our proprietary sweet rub. We smoke the ribs at 275° for 3-4 hours and then add brown sugar and wrap in foil to finish to an internal temperature of 195°. All ribs are cut fresh to order.
We begin with USDA Graded Pork Butt scoring the fat cap and rubbing with our proprietary sweet rub. We smoke at 275° to an internal temperature of 200°. The bone pulls out cleanly and we shred the meat for a moist, tender pulled pork experience.
We begin with USDA Graded Turkey breast and rub it with our Salt and Pepper blend. We smoke at 275° to an internal temperature of 170° and slice fresh to serve.
Available for Holidays as a catering option. Whole Turkeys are injected, spatchcocked, rubbed with butter and spices and smoked to an internal temperature of 170°. The breast is sliced and the thighs are pulled. Legs, drummies and wing flats are left bone in.
Chicken is available on our catering menu and is prepared as halves and rubbed with our proprietary sweet rub and smoked to an internal temperature of 170°.
Beef Ribs are a premium special offered from time to time and are prepared much like brisket to an internal temperature of 198°. Ribs are served by the bone and are bursting with juices and flavor. Beef Ribs are James’ favorite BBQ food.
Pork Belly is a premium special offered from time to time and is prepared much like ribs to an internal temperature of 200°. This produces a rich, creamy texture bursting with flavor and juices. This is an extremely rich meat and usually is served in smaller portions. Pork Belly is a truly decadent option.
Prime Rib is a premium meat offered on our catering menu and it is prepared much like a brisket. However, Prime Rib is not wrapped and is smoked to a doneness of medium or 135°. Arise, Grill, & Eat does not recommend cooking this extremely flavorful meat above 135°.

Smoked Gouda Mac n Cheese is our signature pasta side. It is a combination of Cavatappi pasta, Smoked Gouda, Cream, and Milk.
Garlicky Parmesan Mashed Potatoes is our signature hot potato side. A combination of Red Potatoes, Garlic, Parmesan Cheese, Milk, Sour Cream, and Cream Cheese.
Anasazi Ranch Beans is a premium side using Anasazi beans only grown above 7000’ elevation and discovered while excavating the Mesa Verde area in Southwest Colorado. They are prepared with salt, pepper, Jalapeño and reserved pulled pork.
Smoked Baked Beans use our proprietary sauce and are smoked on our pit along with our meats. We occasionally add reserved pulled pork for extra flair and flavor.
Whole kernel corn seasoned with salt, butter and black pepper.
Cut green beans seasoned with salt, pepper, and a little beef tallow.
